Two Ingredient Pancakes? | Guilt Free Baking With An Empty Cupboard

Set the scene. It's Shrove Tuesday; your all hyped up for your pancakes, the golden syrup dripping down, the fluffy texture, the sweet treat to pick up your mood in dreary February: your pan is at the ready, and then you realize, that like so many of us, you have absolutely nothing to make your pancakes with. I've done this more or less every year since I was old enough to touch the cooker. If I wasn't forgetting to buy every ingredient on the list, then I was probably on some far fetched diet that meant I couldn't partake in the happy day anyway, so it's safe to say Pancake Tuesday was never really my thing. Or at least, that was until I discovered two-ingredient pancakes. I make no claim to have come up with this recipe; whoever did was a bit of a genius, it's so simple, but so effective. I stumbled across it originally while looking at ways to make pancakes whilst following a fairly strict diet; but found it's also perfect for those of us who never remember the date of Pancake Tuesday...


Ingredients: 2 Eggs, 1 Mashed Banana (for the purposes of making a stack I doubled this, but safe to say not many of us will be eating 9 pancakes in one sitting, if you are, then you ave my utmost respect...)

Method : The irony of this is that I am the least skilled person in the kitchen, and there's probably 500 other posts about a similar recipe that are much more intricate, the beauty of this is that it is baking for dummies-  if I'm talking about   baking, then I can assure you the method is a method that could be followed by a four year old. With their hands tied behind their back. Blindfolded.

- Mash the banana into a bowl, I chose to use my hands, but if your remotely mature you may use a fork. It may look like the remnants of a university night out gone wrong, that is ok.

- Crack your eggs, if your looking to really cut any sort of calories out of this recipe, you can use only the egg whites, however you may want to use instant oats or flaxseed to help it all bind. At this point, we whisk: if you can, form peaks with the egg whites, this will help to make your pancakes fluffy and light, or like me, simply mix it in until it looks slightly more cohesive than when we started.

- Mix both mixtures. At this point, I added in Stevia, although this isn't required, but when will sweetener really go amiss?

- Whilst mixing the two, I left my pan on a medium heat with half a table spoon of Coconut Oil - this is not necessary; Fry Light or Spam works also, I just liked the extra hint of flavor it gave. Once mixed, I made my two ingredient pancakes the way I'd make any normal ones. A palm sized dollop in the pan, leave for 20-30 seconds or so or until bubbles start to form, make a half arsed attempt at a flip, pick dirty pancake off of the kitchen work top feebly, try again.

- Once my stack was completed, I added Strawberries and Walden Farms Pancake Syrup (zero calorie, but processed to heck so just as bad for your insides as your sugar laden syrup), there is also the option to add any other extras in whilst cooking, anything extra is simply going to make these pancakes better. They are basic, but they taste good, and are perfect for anyone who wants a guilt free treat with some empty cupboards.
